Sourced by our trusted partner Nordic Approach, this experimental pile-up of naturally processed coffee from Guji, Ethiopia is one of a kind. The cherries are placed on plastic sheets on top of the raised beds in piles, up to 15-20 cm thick, the cherries are then rolled up in the plastic and they are left to ferment in this way. In the Sakicha Station, the coffee cherries are placed on drying tables immediately after arrival, counting on a total of 100 drying tables at the site, taking an average time of 18 days to dry them.
